There are six (known) characters available to be unlocked in Mario Sports Mix, we've put together a table below letting you know which unlockable characters you can get and the requirements for unlocking them.

Black Mage Complete star road located on the Star Cup map twice in tournament mode, Complete Star Road 3 times to unlock Black Mage for three other sports.
Cactuar Either play a total of 60 games, or in tournament mode defeat Cactuar on the hidden path
Moogle Clear the Mushroom Cup slime - play 28 games or defeat him on a hidden path in tournament mode.
Ninja Complete Star Road located on the Star Cup map once in tournament mode
Slime Win 28 games
White Mage Complete Star Road, located on the Star Cup map twice in tournament mode
